What do the fruits do?

A square with a fruit on it is just like a normal green square in that it hides a letter. And just like a green square, the letter will be revealed when you or your opponent makes a word using an adjacent square. However, the letters in fruit squares have special bonuses:

Cherry PP_Cherry_Icon.jpg The letter will have a "+10" in the corner, indicating that it has a point value of 10 rather than the point value normally associated with that letter. PP_Plus_10_Example.jpg
Apple PP_Apple_Icon.jpg The letter will have a "2X" in the corner, indicating that a word created using this letter will have its point value multiplied by 2. However, the letter will have a point value of 1 rather than the point value normally associated with that letter. PP_2X_Example.jpg
Pear PP_Pear_Icon.jpg The letter will have a "3X" in the corner, indicating that a word created using this letter will have its point value multiplied by 3. However, the letter will have a point value of 1 rather than the point value normally associated with that letter. (Note: on the "Go West" map, Pears are 4X multipliers rather than 3X multipliers. The letters will show this accordingly.) PP_3X_Example.jpg

Note that it is the person who uses the letter in his/her word who gets the bonus, not the person who reveals the letter.

A note on multipliers

Multipliers will stack, but they stack additively. So if you made a word that included both a 2X letter and a 3X letter, the word's value would be multiplied by 5 (2+3=5), not by 6 (2x3=6) as you might expect.
